What's Cooking In Our House...

I decided to start making a post every Saturday so I can share a little recipe. I wanted to start off with something really easy and quick. My husband goes to play poker on Saturday nights and has to bring some type of food with him for the potluck. So this is a easy cookie recipe with ingredients I always have in stock.
CAKE MIX COOKIES
1 Boxed cake mix any flavor
1/3c oil
2 eggs
Powder sugar (optional)

Preheat oven to 350. Next mix all the ingredients well. I then roll the dough into small balls and place on a cookie sheet. Usually I roll the balls in powder sugar and then bake, but today I passed this step. (Powder sugar doesn't go over very well at a poker table =) Bake the cookies 9-10 mins. These cookies freeze very well. My favorite flavor is the Lemon cake mix! It's great with white chocolate chips added and rolled in powder sugar.
This recipe will make 24 cookies or if you roll them into smaller balls like I do, you can usually get 40. Happy Cooking
